Cinnamon Sugar Crusted Zucchini Bread
2 ⅓ Cups Sugar
1 Cup Applesauce
2 tsp Vanilla
2 Cups Zucchini, Grated
2 ⅓ Cups Flour
1 tsp Baking Soda
1 tsp Cinnamon
1 tsp Salt
4 Tbsp Cinnamon Sugar
Preheat oven to 300 degrees.
Grease pans and set aside.
Beat together eggs, sugar, applesauce and vanilla.
Add zucchini and mix.
Add all remaining ingredients except cinnamon sugar and mix.
Pour mixture into small loaf pans.
Sprinkle 1 Tbsp cinnamon sugar over the top of each loaf.
Bake at 300 degrees for one hour.
Poke a clean toothpick into the center of each loaf. If it comes out clean, the bread is done. If it comes out with moist crumbs or a wet mixture stuck to the toothpick, bake for a few more minutes and retest.
Makes 4 small loaves.
