Makes 12 Servings
6 Cups Zucchini, Sliced
6 Cups Yellow Squash, Sliced
½ Cup Onion, Chopped
2 Cups Carrots, Shredded
2 Cups Sour Cream
2 Cans Cream of Chicken Soup
2 6 oz Packages Chicken or Herb Stuffing Mix
1 Cup Butter, Melted
Preheat oven to 350 degress.
Add sliced zucchini, squash and onions to a large pot of water.
Add a dash of salt.
Bring water to a boil, then cook for 5 minutes.
While zucchini, squash and onions are cooking, shred carrots.
Stir together sour cream, cream of chicken soup and carrots.
Mix dry stuffing with melted butter.
Place ½ of the stuffing on the bottom of a 9x13 baking dish.
Pour zucchini mixture over the stuffing.
Top with remaining stuffing.
Bake at 350 degrees for 25-30 minutes.
