Chocolate Chip Banana Bread
Makes 4 Small Loaves
2 Ripe Bananas
½ Cup Butter
1 Cup Sugar
¼ Cup Sour Cream or Plain Yogurt
1 tsp Vanilla
1 ½ Cups Flour
1 tsp Baking Soda
⅛ tsp Salt
Optional: ½ Cup Walnuts, Chopped or 1 Cup Chocolate Chips
Preheat oven to 375 degrees.
Grease pans and set aside.
Beat eggs and butter together.
Add sour cream.
Add mashed bananas.
In separate bowl, combine flour, baking soda and salt.
Stir flour mixture into the wet mixture.
Pour into small loaf pans.
Optional: Sprinkle walnuts or chocolate chips over the loaf.
Bake at 375 degrees for 25-30 minutes.
Poke a clean toothpick into the center of each loaf. If it comes out clean, the bread is done. If it comes out with moist crumbs or a wet mixture stuck to the toothpick, bake for a few more minutes and retest.
