Makes 8x8 inch pan, 16 bars
1 Cup Flour
¼ Cup Powdered Sugar, Sifted
½ Cup Butter
¾ Cup Sugar
3 Tbsp Lemon Juice
2 Tbsp Flour
¼ tsp Baking Powder
Extra Powdered Sugar
Preheat oven to 350 degrees fahrenheit.
Stir together flour and sifted powdered sugar.
Cut in butter until mixture clings together.
Press into ungreased 8x8x2 inch pan.
Bake at 350 degrees for 10-12 minutes.
While crust is baking, beat eggs.
Add sugar and lemon juice, beating until mixture is slightly thick and smooth, 8-10 minutes.
In a separate bowl, stir together 2 Tbsp flour and baking powder.
Add to egg mixture and mix until the flour is completely moistened.
Pour over crust.
Bake at 350 degrees for 20 to 25 minutes.
Sift powdered sugar over the top.
Cool and cut into 16 bars.
