Homemade Buttermilk Syrup

1 ½ Cups Buttermilk -or- Buttermilk Substitute (see below)
1 Cup Sugar
1 Cup Brown Sugar
¼ Cup Butter
1 tsp Baking Soda
1 tsp Vanilla
In a 6 quart saucepan, bring buttermilk, sugars and butter to a boil over medium heat.
Remove from heat and whisk in baking soda and vanilla. As the baking soda reacts with the sugary mixture, it will bubble up quite a bit. If you didn’t use a large saucepan, it will bubble up over the top of your pan. As the syrup cools, the bubbles will dissipate.
Buttermilk Substitute
1 ½ Cups Milk
2 Tbsp White Vinegar
Mix milk and vinegar together and let it sit for 2 minutes.
