Candy Cane Muffin Recipe
Makes 12 Muffins
2 Cups Flour
3 tsp Baking Powder
1/2 tsp Salt
3/4 Cups Sugar
1 Cup Milk
1/4 Cup Applesauce
4 Peppermint Candy Canes
Preheat oven to 400 degrees.
Stir together flour, baking powder, salt and sugar. Make an indentation in the center of the powder mixture.
In a separate bowl, beat egg.
Add milk and applesauce and mix thoroughly.
Pour liquid into indentation in the powder mixture.
Mix with a fork until powders are moist and form a batter.
Put candy canes in a Ziploc bag and crush them with a rolling pin.
Pour 1/3 of the crushed candy canes into the batter.
Put liners in the muffin tin.
Fill each liner 3/4 of the way full.
Sprinkle remaining crushed candy canes on top of the muffin batter.
Bake at 400 degrees for 25 minutes.
Poke a clean toothpick into the center of a few muffins. If it comes out clean, the muffins are done. If it comes out with moist crumbs or a wet mixture stuck to the toothpick, bake for a few more minutes and retest.
